Low Fat Unicorn Hot Chocolate

Last night my son and I made unicorn hot chocolate and it was the absolute bomb. It’s not often I write about food or drink but with the kids at school today I kept thinking about how damn good it was and I thought, well, I’ll just make another one for myself because who says kids should get all the cool stuff?! As a January treat this is even better though because it’s a low fat unicorn hot chocolate – yep – all the pretty without any of the guilt, even my super-strict-dieting husband gave one of these a go. They’re also super easy to make which means you and your kids can follow this unicorn hot chocolate recipe together.

Low fat white hot chocolate powder

Liquid food colouring (I use the natural stuff which is generally what you get here in the UK)

Milk – optional

Low fat whipped cream

Coloured sprinkles and stars

How to make a unicorn hot chocolate

First boil the kettle and then make up a hot chocolate in your cup, I tend to use less than the recommended amount as white chocolate is really sweet and with all the cream as well it can be a bit much otherwise! If you’re counting calories the added bonus of this is it makes it lower calorie and fat too. I normally add a bit of low fat milk too but again this is to taste, if you are making this for kids though it’s also a good way to cool it down enough for them too.

Once you’ve done the base of your drink add some food colouring. We used blue because my son would in no way allow a pink drink (sigh) but to be honest I think with all the coloured sprinkles on the top the blue makes a nice change and makes it a bit more unicorn-ish. You can of course use whatever colour you like – I think I use about half a teaspoon per drink. The food colouring drops to the bottom of the cup at first so make sure you give it a good stir with a spoon.

Once you’ve got your unicorn hot chocolate the perfect colour the next thing to do is to add your low fat whipped cream. This will start to melt a bit once you add it to your hot drink so make sure you have your sprinkles at the ready!

    This looks so cool. N’s got really into hot chocolate, so this would be the ultimate. Maybe I’ll try one this weekend for his birthday.
