I love watching Wimbledon and this fun recipe is perfect to snack on while you watch it – strawberries and cream popcorn. I’ve already tested it out with my family and it’s been a huge hit, maybe a little too moreish if anything as we all couldn’t stop eating it! Inspired by the strawberries and cream which are de rigueur for watching tennis but without any sloppy mess – this might just be the perfect snack for the summer.

How do you mix real strawberries with popcorn?
Of course fresh strawberries are fantastic and there’s nothing quite like the flavour of British strawberries in the summer – but mixed up with popcorn? Well you know that’s going to just end up messy and with two small kids and a newly painted house the last thing I need is mushy strawberry hand-prints all up the walls. Ugh. To get strawberries that you can use in your popcorn I popped (ahem) along to Holland and Barrett and checked out their dried fruit selection, the dried strawberries were there with the other dried berries and I was able to pick up the popcorn kernels there as well!
Strawberries and Cream Popcorn Kitchen Materials
Baking Tray
Microwavable bowl or two saucepans
Baking Paper
Spoon
Strawberries and Cream Popcorn Ingredients
Dried Strawberries – 75g
White Chocolate – 200g
Mini Marshmallows – 33G (I used the super tiny baking ones)
Popcorn – around one cup popcorn kernels or enough popped corn to cover a baking tray
Making Strawberries and Cream Popcorn
So to make your fancy popcorn you need to start by making the popcorn itself. Of course you can buy pre-popped popcorn (now there’s a tongue twister!) but it’s so simple to make from scratch that I like to keep to keep some on hand for emergency desserts!
How to make popcorn from scratch
Choose a saucepan that has a lid that totally covers it and then pour a couple of tablespoons of oil into the bottom of the pan then add a layer of popcorn kernels on top of this. You want it so they cover the base but don’t go on top of each other. Put the lid on the pan and then heat it on the stove on a high heat, turn the heat lower once you hear the popcorn pop and leave it to pop until the popping sounds are a second or two apart and then take it off the stove. You’re done! To make your strawberries and cream popcorn place some baking parchment onto a baking tray and then put a layer of the popped popcorn onto it. Chop your dried strawberries into small pieces and then next up next is melting the chocolate.
How to melt chocolate for popcorn
Of course you can melt chocolate in your microwave which is probably much easier but – Luddite alert – I don’t own a microwave. To melt the chocolate for this strawberries and cream popcorn using your stove break all of your white chocolate into squares and place it in a small saucepan. In a slightly larger saucepan heat some water and put the smaller saucepan inside this, making sure that the water from the larger pan doesn’t spill over into the saucepan with the chocolate in it. Stir the chocolate with a spoon until it’s all melted and then it’s ready to pour.
Finishing making your strawberries and cream popcorn
Pour your melted chocolate onto your popcorn and then add half your chopped strawberries and mini marshmallows on top of this. Stir the popcorn so that all the popcorn gets some of the white chocolate mixture on it and then add the remainder of your chopped dried strawberries and mini marshmallows on top. Leave to cool – I did this in the fridge and the popcorn was fine.
Once your strawberries and cream popcorn is cooled take it off the baking parchment and it’s ready to eat – perfect for a Wimbledon snack! All my family loved this especially my son who now wants me to make fancy popcorn more often!
